    • Melt 50g butter with 60g of brown sugar and 125g honey, allow to cool, add to a mixture of 250g flour, 5g baking powder and a teaspoonful on bicarb, and a teaspoonful of eah of the following spices; ginger, cloves and cinnamon, the grated rind of one lemon and one orange. To the mixture add one egg and work into a smooth mass. Leave in a cold place for 5-12 hours then roll out 3mm thickness on a floured board cut into required shapes and bake on a sheet of non stick paper for 7-8 minutes in a 200 degree oven. When cool the shapes can be decorated
