Ceviche is one of the great foods of the UK. For someone who has worked in food in the past it is sadly under-eaten in the UK… only in a few trendy restaurants in London. To be honest the food in Peru is actually amazing – chicharron, camote, pollo a la brasa, causa, papa rellena, papa huancaina… all amazing.

I fell in love with ceviche when I was in South America. Done so simply but so well.
